For the stir-fry:
- 1 block of firm tofu, drained and diced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 cup baby corn
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon cornstarch
- Salt and pepper, to taste
For serving:
- Rice
- Fresh cilantro, chopped (optional)
Instructions:
- In a large pan, heat the vegetable oil over high heat. Add the diced tofu and cook until golden brown, about 5 minutes. Remove the tofu from the pan and set aside.
- In the same pan, add the garlic, red bell pepper, yellow onion, broccoli, snow peas, and baby corn. Stir-fry for 5 minutes, or until the vegetables are tender.
- In a small bowl, whisk together the soy sauce, hoisin sauce, cornstarch, salt, and pepper.
- Add the tofu back to the pan with the vegetables and pour in the sauce. Stir-fry for 2-3 minutes, or until the sauce has thickened.
- Serve the stir-fry over rice and garnish with fresh cilantro, if desired.
