For the sweet potatoes:
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
For the black beans:
- 1 can black beans, drained and rinsed
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 1 jalapeƱo pepper, seeded and minced
- 2 tablespoons fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper, to taste
For the tacos:
- 8 small corn tortillas
- Shredded lettuce
- Salsa
- Shredded cheese
- Fresh cilantro, for garnish
Instructions:
- Preheat oven to 400Ā°F (200Ā°C).
- In a large bowl, mix together the diced sweet potatoes, olive oil, chili powder, cumin, salt, and pepper. Spread the mixture on a baking sheet and roast for 20-25 minutes, or until the sweet potatoes are tender and lightly browned.
- In a separate pan, heat the black beans with the red onion, garlic, jalapeƱo pepper, cilantro, lime juice, salt, and pepper. Cook until heated through.
- To assemble the tacos, place a few spoonfuls of sweet potatoes and black beans onto each corn tortilla. Top with shredded lettuce, salsa, shredded cheese, and fresh cilantro.
